You know the saying, “when life gives you lemons, make lemon aide”, well my philosophy in life runs in the same vein: When the banana’s of your life turn black, make banana bread.” Which is my way of saying, when life’s being a little rough with you, eat cake. Also, it ties in rather neatly with my Waste-not-want-not upbringing. For a change, however, it being The Season of Great Changes and all, I eschewed all things expected and made something a little crazier. When asked to provide, and I quote, A Simple, No Fuss (with a pointed raised eyebrow, Ms Vickers) Dessert for an evening of screaming and gasping over the new series of Battlestar Galactica, what better remedy to such an unnatural request than brownies; and with those last two, very black banana’s staring at me from the bottom of the dusty fruit bowl, what else could I do but provide Banana Chocolate Brownies? These turned out to be a bit drier than my normal brownie recipe, which I usually diligently obey Nigella’s instruction on, but that made them just perfect with a big, yummy scoop of banana ice-cream.

*note: I put a cup of walnuts on top of the mixture before baking to make a walnut-like crust, but go ahead and mix them into the batter before baking. Ditto with the white choc chips, or go super wild and use dark choc chips for extra punch.

Banana Chocolate Brownies

adapted from The Canadian Living Test Kitchen

80 ml butter (⅓ cup)
185g dark chocolate, chopped (I used a mix of 60 and 70%)
150ml sugar (⅔ cup)
2 eggs
Heaping, oozing ½ cup mashed, ripe banana (the blacker the better)
2 tsp Vanilla
150ml flour (⅔ cup)
1tsp baking powder
pinch of salt
¼ cup white chocolate chips
1 cup walnuts, broken up

– pre-heat oven to 350˚F

– line an 8″ square baking tin (or equivalent)

-in a heavy bottomed saucepan, melt chocolate and butter. Let cool a bit, then whisk in the sugar.

– in a separate bowl, whisk the eggs with the banana and vanilla. Add to the chocolate mix.

– whisk together the flour, baking powder and salt, sift into chocolate and mix well.

– scraped into baking tin, top with nuts.

– bake for about 30 mins until set in the middle. Remove from oven, top with white chocolate chips and allow to cool for about 10 minutes before cutting.

Red Snapper with Lemongrass and Sweet Chili

This is one of my favourite dishes to make. It’s really easy, involves little actual cooking and is great tasting and healthy too. Also, it’s an impressive and exotic looking dish for a dinner party, if your friends don’t mind the whole fish. Actually, most of the flavour of a fish is in the bones and the skin, so cooking a whole fish makes much more sense. Just mind the bones while eating! I’ve adapted it from a recipe from Australian Women’s Weekly (some of my favourite books are from this range) for an outdoor barbecue dish, where the fish is grilled on a barbecue in banana leaves. A bit difficult to get in Toronto! I added a sliced banana underneath the fish and it absorbs all the flavours and sticky sweet spices from the fish to make a very complimentary chutney. Serve it with a sticky rice such as Thai, to sop up all the juices, a fresh salad (recipe underneath the fish) and edamame, boiled for a few minutes in salty water.

Red Snapper with Lemongrass and Sweet Chili

1 large, whole Red Snapper, descaled and cleaned by your fishmonger
1 big fresh lemongrass, thinly sliced (to make about ⅓ cup)
2 cloves garlic, minced
2 Tbsp fresh grated gingerRed Snapper with Lemongrass and Sweet Chili in parcel
1 Tbsp fresh lime juice
2 Tbsp soy sauce
¼ cup sweet chili sauce
2 Tbsp fish sauce
1 tsp sesame oil
1 banana, quartered length-ways
2 Tbsp chopped Cilantro
– wash the snapper under cold water and pat dry with paper towel

– in a bowl, mix garlic, ginger, lime, soy, chili, fish sauce and sesame oil.

– lay out a piece of baking parchment with a equal size piece of foil on top, large enough to wrap the fish

– lay 3 quarters of the banana in the middle of the foil.

– put the fish on top of the banana, put the remaining quarter banana inside the fish cavity

– cut three slashes into each side of the fish. Top with ginger/lemongrass, rubbing some mixture into each cut. Sprinkle with Cilantro

– wrap the fish in the foil and then in the parchment, tie with string to secure. Rest in Fridge for 20 mins.

– pre-heat oven to 420˚F. Bake fish for 20 – 30 mins until done.

Carrot and Cabbage Salad

3 small carrots, julienned
3 0r 4 outer leaves from a fresh, green cabbage, finely sliced
2 spring onions, sliced
Cilantro,chopped to make ⅓ cup
Basil, chopped to make ⅓ cup
Parsley, chopped to make ⅓ cup

dressing:

1 Tbsp fresh lime juice
1 Tbsp fish sauce
1 tsp soy sauce
1 tsp sugar
1 tsp sesame oil

Banana chocolate tarts with coconut

While away camping in Algonquin we had something for dessert that I haven’t had in a million years. I watched the shiny parcels being made up and carefully placed in the hot, glowing coals of a camp fire and as the packages were eventually passed around, one at a time, the silver foil peeled back and the sweet steam billowed into fire-lit faces, I felt eons and ages dissolving from my soul like the shadows of night at the dawn. I was a child again for a while; I was 5, I was 7, I was 11 years old gleefully eating baked banana’s with chocolate oozing out of them. That weekend had many moments that will stay with me forever, and that will be one of the top ones. This is a slightly less messy, more grown up approach, but just as yummy.

*ps/ I sneakily made a double batch of the pastry from the peach tart, which I used here. Use your own taste when making these tarts up as to the choc/coconut/banana ratio. Amounts are only a guide.

Chocolate Banana Tarts with Coconut

6 Pate Brise lined mini tart tins (5″)

90 ml dark chocolate spread (or use a hazelnut choc spread like Nutella)
60 ml dessicated coconut
3 large banana’s, thinly sliced
30 ml white sugar
30 ml light brown (blonde) sugar

– preheat your oven to 400˚F

– Spread 1 Tbsp choc spread on the base of each tart shell

– divide the coconut between the tarts (about 2 tsp each)

– arrange the banana slices over the coconut

– mix the two sugars in a small bowl

– sprinkle half the sugar over the tarts, reserve the rest

– bake the tarts for about 20 mins.

– Sprinkle remaining sugar over banana’s. Caramelise with a blow torch until sugar is golden.

– alternatively, grill under a hot grill in your oven for a few minutes, but keep an eye on them so as not to burn the pastry.
