Whiskey figs with oats

There’s something about a hot, steaming bowl of fresh oats porridge on a lazy Sunday morning that somehow sets the tone for the rest of the day. A good, long read of the Sunday papers, a walk in a park in the winter sunshine and a late afternoon nap, followed by a sightly too long, intricately woven Sunday Night Movie, with the wonderful Mr P’s fabulous toasted cheese and a glass of good red wine.

My mother used to make us oats porridge in the winter back home and it still remains an essential part of our routine here, steeped as it is in nostalgia and caring. Of course, we wouldn’t be indulged so much with such adult delights as whiskey and figs, but rather heap our bowls up with a slathering of butter and golden syrup. Our tastes being somewhat more subtle and grown up these days, the smokey, peaty flavours of a good whiskey or scotch paired with fruity figs takes that humble bowl of oats from chilly school morning to the glories of the Sunday breakfast table.

*As with all things cooking, the better the ingredient used the better the results. Don’t skimp on a cheap whiskey, use what ever your favourite nightcap version is; after all, you only use a tiny amount. Naturally, if you don’t do the booze feel free to leave it out.

**Try get dried green/white figs as the flavour is more subtle than the red or black mission figs. I like the softer ones from Iran or Turkey.

Whiskey Figs with Oats Porrige

5 or 6 dried figs, quartered
about 1 cup water
1½ Tbsp good whiskey or scotch
2 cardamom pods, lightly crushed with the back of a heavy knife
1 cinnamon stick

whole oats, not the instant kind, enough for 2 people
water for cooking the oats

cinnamon sugar to serve

– combine the water, whiskey, cardamom and cinnamon in a small, heavy based saucepan and bring to a simmer.

– add the figs and simmer over a low heat for 10 – 15 minutes, checking that the pot doesn’t run dry. Top up with water as needed.

– when the figs are done, drain, reserving liquid, and keep warm.

– use the liquid from the figs along with hot water to make up the liquid needed to cook the oats as per the package instructions.

– top cooked oats with figs and sprinkle with cinnamon sugar to serve.

We humans, for the most part, like a bit of ritual in our lives. Well, I know I do. Setting a certain, predictable rhythm to the day creates a sense of purpose and dependability, little ceremonies that break up the chaos in between our modern lifestyles. I like to read in bed with a cup of chamomile tea before turning in for the day, and I like having the time to sit on weekdays over my morning’s emails and news with a cup of good, hot coffee and a bowl of muesli. I usually mix my own muesli from jars of grains, nuts and fruits in the cupboard, but in the spirit of the Christmas Clear Out, I took the opportunity to use up  the various stores of dried fruits and nuts left over from the Christmas pudding and fruit cake and mix up an enormous bowl of muesli to keep in jars, ready to go. Just add yoghurt and that cuppa java.

There’s no recipe for this, just use what ever you have on hand. Start with handfuls of chopped dried fruit: I used cranberries , apricots and cherries for zing; papaya and pineapple for that almost candy like sweetness; and pears, figs, apples and dates for texture as well as raisins, currants, mulberries, prunes and oh, I forget what else. Add a few cups, to taste, of various grains: I used both raw, rolled oats and oat bran and a generous helping ground flax, to which I added poppy seeds, sesame seeds, sunflower seeds, coconut flakes and a variety of nuts (brazil, almond, walnut). Sprinkle with cinnamon, a bit of nutmeg and a pinch of garam masala and mix it all up. Make it as fruity or as whole-grainy as you like and you’ll never want boxed breakfast again. Promise.

Pizza rustica 1

Hello? Why, Hello! It’s been such a while since I last saw you, have you changed your hair? Yes, as you’ve no doubt guessed, life has been busy. But when isn’t it, and is that ever excuse enough for complete and utter neglect? I think not. Be that as it may, I have been somewhat distracted by other tasks, though here I am again, cooking it up and sharing what I can. Right! Lets get this year on the road! Lets finally, three weeks in, Whoop it up for 2008. Hope it’s cooking.

As a little make-up kiss, I give you a dish that sets my mouth to watering every time I think about it. It’s a dish that’s rich and warm and comforting and the perfect meal for that lazy, hazy, feet on the couch time between Christmas Feasting and New Year Bashing. Also, note to self for next year, would be perfect as a New Year Day Bash Recovery Unit. The recipe is from that Matron of the Mixing Bowl, Nigella, though I tinkered here and adapted there to come up with something better suited to a Dutch Father-in-law and a bacon-loving Mother-in-law. Also, I might add with a pat on my own back, I had enough foresight to pre-make the pastry during my initial Christmas Baking Bonanza in mid-December, which took a lot of the effort out on the day. Handy when you’re trying to keep guests vaguely entertained at the same time as cook up a brunch.

*Use a 23cm Springform Pan to make the pie.

Pizza Rustica a la Paesi Bassi

For the Pastry:
250g plain flour
1 stick (125g) butter, cold, cut into 1cm pieces
2 egg yolks
2 Tbsp iced water
1 heaped tsp salt
1 Tbsp caster sugar

For the filling:
75g Luganega (Italian Pork Sausage)
1 Tbsp Olive oil
250g ricotta, drained
50g smoked provolone, diced
125g dutch Gouda, diced
50g freshly grated parmesan
1 clove garlic, minced
2 Tbsp Italian Parsley, finely chopped
¼ tsp cayenne pepper
2 rashers streaky bacon, chopped
100g mortadello, chopped
2 eggs, lightly beaten
freshly ground black pepper
1 heaped Tbsp dry breadcrumbs

For the glaze:
1 egg yolk
2Tbsp milk

large pinch fleur de sel

Make the pastry:
– put the flour and butter in a dish in the freezer for 10 minutes. While this is chilling, mix the egg yolks, water and salt in a small bowl.

– When the butter is thoroughly chilled, add the sugar to the bowl and rub the butter into the flour and sugar until it resembles something between damp sand and oats porridge. Little lumps of butter are a good thing, you don’t want to overwork the butter into the flour.

– Add the egg/water mix and gently mix with your hands until the dough just comes together. It should still be a somewhat loose and crumble.

– Tip the pastry out and work it together with your hands to form one lump, more or less. Divide the dough into two parts: one slightly larger than the other. Wrap each in cling wrap and refrigerate.

Make the filling:
– Place a baking tray in the oven and pre-heat it to 400˚F

– Skin the Luganega, heat the oil in a skillet and fry the sausage meat for about 5 minutes, breaking it up as you cook it. Allow to cool

– Mix all the ingredients, including luganega, except the bread crumbs in a large bowl until well combined.

Assemble:
– Roll out the larger of the pastries to line the bottom and sides of your greased springform pan, allowing for an overhang. Sprinkle the bottom of the pastry wit the dried bread crumbs, then add the rest of the filling mixture.

– Roll out the smaller pastry large enough to cover the tin with an overhang. Roll up the two overhangs to seal the pie and press with prongs of a fork.

– glaze with the eggy milk mix and stab here and there with a fork to make air vents. Sprinkle the top with fleur de sel.

– bake for 10 minutes at 400˚F, then turn the oven down to 180˚F and bake for a further 45 minutes.

– Allow the pie to cool for 15 minutes before serving, although it’s excellent cold as well.

Scrambled eggs with proscuitto and Etorki

So, we moved. And as anyone who’s moved will know, it’s always a bit of both worlds: it’s exciting, but it’s not usually a lot of fun until a couple of weeks after the fact. This move was, however, something special. And I mean not so much in the way of, “oh, a puppy for my birthday? That’s so special!” but leaning more to the, “she took your whole closet and put it through a garbage disposal? Wow, that’s special.” We arrived in good time, with the Big Burly Boys who were carrying all our Stuff, to a house full, from attic to basement, with contractors and all their various paraphernalia. Not only did we have to compromise on where we were allowed to put our boxes and furniture, but we had to put up with nearly a week of work still to be done before we could start unpacking. That being said, we just know we’re going to love the house, and all the headaches will be worth it in the end. I have a new oven and hob to get used to and test out and a bunch of recipe ideas wafting around in my head, where they’ve been collecting dust over the last few weeks. What I really need, though, on this chilly November day, is a hot, creamy plate of scrambled eggs, all the more delish with some prosciutto and Spanish Etorki cheese, fresh baguette, a cup of hot coffee and some fresh fruit juice. Funny how a good breakfast makes it seem all just so much better, non?

Muslie pancrepes

We’ve all heard it a thousand times before: Breakfast is the most important meal of the day. We’ve heard it from our mothers and fathers, from our doctors, our teachers, our newspapers and magazines. I had to learn the hard way to start the day off right. I used to wake up late, being a committed fan of Club Duvet, rush through my morning routine of showering, dressing and general cleanliness and then dash out the door and head off straight to work. “I’ll grab something at work” I used to tell myself, but apart from a cup of tea or coffee, I very often would get so absorbed and distracted by work that I’d look up, famished, at 3 0’clock and wonder why I felt so tired and lack-luster. Now I know: if I skip a meal, I won’t make it through the day without needing to put my head down. And while I love a nap now and then on a rainy Sunday, there’s really just so much I’d rather be doing. During the week, as a rule, I usually start the day with a lovely bowl of muesli, which I custom make from my little jars of grains, seeds, nuts and fruit, with a dollop of yoghurt and a generous mug of fresh Cafetiere-style coffee. Weekends, when the ever delightful Mr P is around, is when the fun happens. So what do you do when you’ve had a long weekend full of the fun and you’re somewhat fed up (so to speak) with eggs over easy and blueberry pancakes; but your husband wants something a bit more elaborate than a bowl of cereal? Well, a wise woman would tell you, marriages are all about compromise, non?

Voila.

*note: due to the lack of plain flour gluten (I’m guessing here) these Pancrepes don’t hold together as well as ordinary crepes, so they’re somewhere between Crepes and all-American breakfast pancakes. Hence the name. Get it?

Muesli PanCrepes with Berry Compote and Cream Cheese

for the pancakes:
½ cup + 2 Tbsp Quinoa flour
2 Tbsp ground flax seed
2 Tbsp ground oatbran
1 Tbsp poppy seeds
1 Tbsp ground cornmeal (not corn starch, but finer than Polenta)
1 Tbsp ground Almonds
1 tsp baking powder
½ Tbsp maple sugar (or use caster sugar)
pinch salt
1 cup rice milk (or cows milk)
2 eggs, beaten

for the compote:
1 cup berries of your choice (I used wild blueberries and blackberries)
¼ cup water
½ Tbsp maple sugar
1 Tbsp lemon juice

cream cheese to serve

1: make the batter

– combine all dry ingredients and mix thoroughly with a whisk

– combine eggs and milk. Add to dry ingredients and whisk until smooth.

– leave to stand for 20 mins or so, while you make the compote.

2: make the compote

– combine fruit, water, sugar and lemon juice in a saucepan. Bring to boil, reduce heat and simmer for 10 mins. Keep warm while you make the pancakes.

3: make the pancakes and serve

– put a plate on the lowest rung of your oven and turn the oven onto it’s lowest setting. Put a small dollop of butter onto the plate.

– heat a non stick skillet or frying pan or griddle on a medium to high heat

– using a soup ladle, drop one ladle of batter onto the hot surface at a time, swirling the mixture around the pan a little to spread it out. The end pancake should be somewhere between crepe and pancake thickness.

– when bubbles begin to pop on the surface, carefully turn the cake over using an egg lifter and cook the other side.

– when the pancake is cooked, put it in the oven on the plate while you cook the rest. If you’re feeling indulgent, plop a little piece of butter onto the top of each crepe while it waits for its neighbour.

– serve with fruit compote, cream cheese and plenty of Maple syrup.
